We experienced a legitimate ‘parrillada’, an Argentine grill out. We had this huge fire pit grill available at our campsite in la Colonia Suiza, Bariloche, and we wanted to put it to good use. Jose stacked the pit with wood and got a nice fire going. Our argentine friends coached Jose on the ways of Argentina grilling. They showed up with a wide selection of cuts of meat to cook ‘a la brasa’, with the wood ambers rather than with direct fire, slow cooked the meat, to get the right texture and moisture. . No need to hurry.  Argentines eat dinner super late.
